Although this wine has a high sugar content, it is not at all cloying, due to the balance between sugar, acidity and polyphenolic substances.
Our Pedro Ximénez 1730 is a magnificent example of what a Pedro Ximénez from Jerez should be. It is a jewel, the result of years of aging in American oak barrels.
Mahogany color with a very pronounced tearing due to its great density. It presents an aroma dominated by the smell of raisins and has notes of toasted sugar, coffee, as well as light notes of wood and vanilla.
In the mouth it is sweet without being cloying, warm and velvety. It presents an exquisite raisin flavor with notes of coffee and wood, with a slightly bitter aftertaste. Great persistence in the mouth.
FOOD PAIRING
Pairs well with blue cheeses (Cabrales, Gorgonzola or Roquefort) and desserts such as vanilla ice cream and red fruit cheesecake. Dark chocolate is the perfect ally.
